Ok, so I've never ever done any touring but I gotta give it a try. I'm just a poor college student and hence I don't have a lot of time but I was wondering how long it would take me to get to Canada or out to the West coast. Any help would be great (eg. routes, daily mileage, etc.)

Average mileage for loaded touring is about 50/day. Dependent on endurance, wind direction, hills, motivation, etc.
Rough out a route on either Google or Ridewithgps.com. There are other sites for this. Buy state maps as needed for details.
Adventure Cycling Association offers detailed maps specifically for bicycle touring. If suitable to your route, I'd suggest you use them. They will likely save you as much as they cost. Utah to California/Canada would not be real expensive as they come in sections. Buy only the ones you need.
When you finalize your route, make inquiries of WS hosts nearby. Not only for possible hosting, but for specific advice on your route. They might have suggestions for making the trip quicker/easier/more interesting. If I had asked, a host in Billings could have told me how to avoid a long 6% climb.
Check out www.crazyguyonabike.com. All there is to know about touring is there somewhere. I bet there are a number of journals that would help answer your routing questions. Do a search with some key words.
