I've hosted on 8 occasions and will be a guest in the UK, France and Spain over the next few weeks. What's the etiquette for guests - would I be expected to bring a sleeping bag or do hosts provide bedding as I always have? I can't see anything about this in the WS rules and guidance

There are no rules about that

There are no rules about that, WS hosts need only provide floorspace as a minimum. Any doubts you have about anything need to be communicated directly to the host concerned.

When I'm touring, I normally camp out so have my sleeping bag with me. I'll often use the bag when staying with warmshowers hosts to save them washing the sheets.

I agree. You already have your sleeping bag, don't you? Offer to use it at your hosts house. It will save them cleanup time afterwards.
If they insist on you staying in their bedding, at least you offered...
